Meal Planner

i had a large bulletin board in my kitchen that was just an accumulator of  various paper clipping, business cards that were out of business and other various things. It really was not doing anyone any good and was more of an eye soar than anything else. So I decided to do something about it! Believe it or not I already had everything  I needed. It was all around my house leftover from other projects. The fabric was leftover from a dress I made Kaia when she was One! I knew it would come in handy some day.

These letters were bought at Discount School Supply they are the Large Wooden Letters

I had an idea for my old pushpins to maker them cute again without buying new ones. I hot glued some rhinestones and gems on them.

Here they are all cute and snazzy.

I also wanted to make pockets for my menu cards

I hot glued fabric on them and used felt letters (I got these at Michael’s a few years ago)

Once that was done I stapled them to the board

I made cute clothespins too! So simple I just cut some ribbon to size and hot glued it to the clothespin with a gem

And then I hot glued the clothespins to the board

I made recipe cards by making a list with my husband of our favorite meals.  I then added more by going through our cookbooks and finding recipes I knew we had liked in the past or ones I wanted to try.

On the back of each card is the title of the cookbook and the page plus basic ingredients needed.

The clipboards are the kids chore charts. I covered them in the fabric as well. I have around 60 recipe cards, Once used for the week it goes into the “old” card holder. when most of the cards are used up those cards go back into rotation. This ensures that we are not eating the same thing every night.

Pancakes- Our New Obsession

Okay not sure if any of you have seen the yummy Birthday Cake Pancakes floating around on Pinterest. I have and they sound great. Problem is I do not keep buttermilk in the fridge I do however keep Bisquick in the cupboard. I like to keep things pretty simple and easy to make so I came up with this recipe which is awesome!

Ingredients:
1 Cup any cake mix (I used yellow in the pictures below)
1 cup Bisquick
1 cup milk
2 eggs
Sprinkles (optional)

For Glaze
Heavy cream
Powdered sugar

Pour some powdered sugar in a bowl add a little bit of cream at a time to get the consistency for the glaze you like.

Follow Directions on the back of the bisquick box. Just substitute 1 cup of cake mix for 1 cup of bisquick the rest stays the same.

Variations:
They are endless!
What we have tried:
One of our favorites is using 1 cup of carrot cake, 1 cup of bisquick, 1 cup milk, 2 eggs and throwing in some dried cranberries. They taste amazing!
Use Chocolate cake mix, red velvet etc

You can use any kind of sprinkle to coincide with any holiday etc!

Yummy Stew

I know it may not look super delicious but it was. We made a Veggie Stew entirely from scratch. It started with some super delicious not so pretty tomatoes from our Garden. We have a ton of them and I was trying to figure out what to do with them so I thought soup. Then from there I started thinking about the other veggies we had. And it turned into an awesome stew that Kaia helped make. She did most of the work except for the peeling and the seeding of the tomatoes. (I will not be doing that again) It was a lot of work.

Ice Pop Joy Book- Review and Giveaway

Ice Pop Joy has arrived! I have been waiting to make yummy pops. We make Popsicle’s every Summer and my usual frozen smoothies have been getting a bit old. They are good but plain strawberry and yogurt pops are not the most exciting things in the world. Well the secret weapon we’ve been waiting for is here. The recipes in Ice Pop Joy will encourage your kids to try new flavors and appreciate fresh, seasonal ingredients. Kaia has already helped to start variations of the recipes to create her own yummy Pop from ingredients we have around the house. She even got excited when we were at the Farmer’s Market yelling “Oh Mommy wouldn’t these Guava’s be perfect for our Pop’s!”. They were awesome in her own inspired Ice Pops. We blended the Guava’s with Mango’s, Greek yogurt, and agave nectar. They were delicious!

The first section of the book offers tips parents can use to open dialogue with their kids about eating healthy, including:

1. Dont hide the ingredients from them. Ask for their suggestions on creating a signature veggie pop that you can name after them.
2. Have your children be active participants in choosing ingredients for your pops.
3. Keep offering! Allow your children the room to express likes and dislikes, but keep trying with veggies, as childrens tastes change as often as they do.
I love that the book even gives helpful tips about commom problems. My kids definitely have textural issues. Kaia generally will not eat meat because she does not like the texture. So this is the tip the book gives. “Sometimes an unusual texture leads to the ewww response from children. Easily change the texture of some high nutrient foods such as tofu or kale by blending them into your pops.”

The recipes in the book are organized into chapters according to the main ingredients used in them. These include Pure Fruit Pops, Veggie Pops, Yogurt Pops, Tofu Pops, Herbal Tea Pops, Chocolate Pops and Specialty Pops . The final section of the book offers a Resources section, listing online sources for the ingredients and other items used to make the ice pops, and a References section that provides further nutritional information about the ingredients used in the recipes.

I love that this book gives alternatives to sugar like Agave Nectar which we use regularly (we buy ours at Costco), honey and more.

Recipe From Ice Pop Joy

Rooibos Red Tea Immunity Pops

Ingredients:

•3 Rooibos Red Tea bags
•¼ cup agave nectar
•1 whole grapefruit, squeezed
•1 cup fresh strawberries, chopped
•½ lemon, squeezed
•1 cup of ice

Preparation:

1.Boil 4 cups of water on stove top and
add in tea bags.
2.Add agave nectar.
3.Let simmer on low for 10 minutes.
4.Let cool to a luke warm state.
5.Pour tea mixture into blender.
6.Add in grapefruit juice, strawberries,
lemon and ice and blend to a smooth
texture.
7.Pour mixture into chosen pop molds.
8.Freeze.

Makes 8
4 oz. pops
