I make most of the meals in our house. I try to make our meals healthy well rounded with the best ingredients I can find. I do occasionally get in a rut like as of late I was having the hardest time coming up with ideas of what to make for dinner, especially for the kids. My picky eaters are just that picky eaters Kaia seems to be on a from a box Mac and cheese diet which is not the healthiest thing. One of my new favorite cooking books is Organically Raised. It gives great ideas and recipes for mealtimes for babies and toddlers. I was able to expand on a lot of the recipes in this book making them bigger so the whole family could eat them or adding to them. The Organically Raised cookbook has so many incredible recipes that have become family favorites like Kael’s Mexican Rice Tortilla soup and Natalie’s old- fashioned whole wheat pancakes with warm blueberry agave syrup. Eating healthy is important everyday and with school coming its more important then ever. Organically Raised has recipes that would be perfect breakfasts, lunches, afterschool snacks and dinners. Plus it teaches you how to get started on eating Organically and for you knew Mama’s out there it helps you decide when the right time to start feeding your baby solids is for you. Organically Raised is a fantastic cookbook one I know we will be using for years.

zac’s mac ’n’ cheese twist

A more sophisticated version of a childhood favorite, this recipe features more complex flavors for your child’s developing culinary palate. You can play with this dish and add veggies and other favorites as you become more comfortable with the ingredients. Enjoy!

Makes 10 servings

1⁄2 cup + 2 tablespoons butter
8 slices whole grain bread (crusts removed),
cut into 1⁄2-inch squares
51⁄2 cups whole milk or rice milk
1⁄2 cup unbleached or all-purpose flour
1⁄2 teaspoon sea salt
2 teaspoons wheat germ
1⁄4 teaspoon ground nutmeg
1⁄4 teaspoon ground black pepper
1⁄8 teaspoon ground red pepper
4 cups grated Cheddar cheese
11⁄2 cups grated Romano cheese
pound elbow macaroni
1⁄2 cup soft tofu, drained and cubed very small
1.Preheat the oven to 375˚F. Butter a 9 °— 11-inch glass baking dish.
2.Melt 4 tablespoons of the butter and toss with the bread. Set aside.
3.Warm the milk in a medium saucepan over medium heat, stirring frequently.
4.Melt the remaining 6 tablespoons butter in a large pot over medium heat. When the butter starts to bubble, add the flour and whisk the mixture for about 1 minute. Slowly whisk in the hot milk. Continue cooking the mixture, stirring continuously, until the liquid
5.bread cubes on top.
6.Bake for 30 minutes, or until the cheese mixture bubbles and the bread cubes brown.

These are special memories and can only be made in our own families with the awareness that these traditions start early and carry on to the next generation.
